Hi Jeremy, I was recently recommended to Digital Ocean for simple low-cost hosting and have been quite pleased with the service. They also have some very easy-to-follow documentation and instructions for setting up all sorts of basic server-side software including mediawiki https://www.digitalocean.com/community/tutorials/how-to-install-mediawiki-on-ubuntu-12-04 (this is for Ubuntu Linux, but there are many other OS available too.
