You might want to checkout Laughing Seed (which is most likely the best Vegetarian place in Asheville). My wife and I lived in Asheville for 7 years and ate their often.

Joyce, unfortunately the other veg restaurant I could find (Ophelia's World 
Cafe and Bar <http://opheliasworldcafe.info/>) is closed on Mondays. But, as 
others pointed out, most other restaurants have veggie options. 

If anyone else knows of a veg*n restaurant nearby that isn't on the list, by 
all means, please add it!
