When I recently taught a beginning web coding course I told mac users they would be fine to start out just using textedit. If you really want them to get the advantage of color coding and other, more modern features, there are also online editors like: that you can take a look at. Bluefish and Eclipse work on mac, although I don't know what kind of legacy support they have. Seems like it would be strong, though, since Eclipse is very widely used and has been around forever.
