Here in Florida we have Florida Academic Library Services Cooperative (FALSC), a state mandated consortium that offers shared instances of OJS, Islandora and Aleph ILS among lots of other stuff that I'm less familiar with.

Marmot in Colorado offers Pika, their flavor of VuFind, and I believe that they are offering or will offer Islandora.
